2018 Clare Valley Watervale Basket-pressed Cabernet Sauvignon

Out of stock

This wine has had minimal filtration to help build the juicy round mid palate…….. mulberry/herbaceous and cassis aromas…….. fine tannins and subtle oak…….. voluptuous long finish on the palate!

93 points, Highly Recommended, James Halliday Wine Companion 2024 (reviewed January 2023):

“As the wine name tells us, this is basket pressed. It feels more medium bodied than the alcohol (14.5%) suggests. Slick with satiny tannins, imbued with blueberry and mulberry fruit characters, seasoned with clove and cigar box savoury elements and generally looking a bit claret-like. Ready for drinking and doing cabernet proud in Clare Valley, it’s pitched perfectly between all its elements and drinkability is high. A gem.”

A medium to full bodied wine of immense drinkability.

The fruit for this wine was sourced off our own winery vineyard. Soil profile is brown to red loam over limestone. Yield was 3 tonnes/acre.

Mild heat days and cool nights during ripening allowed for the development of pronounced flavour profiles. The grapes were harvested in late April and fermented on skins through to dryness in static stainless steel fermenters. Traditional time-honoured basket pressing has given the wine a good mid palate structure and length of flavour. 14.5% alc/vol.

This Watervale Cabernet Sauvignon was sourced off our own winery vineyard. Salient mulberry/herbaceous and cassis aromas. Juicy berry flavours give depth to the mid palate balanced with fine tannins and subtle oak. This round and voluptuous style is a result of time-honoured basket pressing, finishing with good length of flavour. Cellaring potential of 5 – 7 years.
