Produced in a Spanish mould, with a unique savoury and subtle floral aspect.
The fruit for this wine was sourced off a single site vineyard in the sub-region of Watervale. Soil profile is red loam over limestone, typically known as terra rossa. Yield was 2.6 tonnes/acre.
Varying temperatures of mild to hot days accelerated the ripening period. However, the traditional cool nights helped retain good flavour profiles. Minimal soaking on the skins and then drained off to a static fermenter for cold settling. Racked off gross lees and then seeded for fermentation over two weeks through to dryness. Cold stabilised and filtered. Bottled in July. 13.0% alc/vol
A lovely salmon pink colour with aromas of cherry and violets. The palate is elegant and has a refreshing dry finish with delightful berry fruits. Perfect as an aperitif or to enjoy with a selection of seafood, Asian cuisine or Mediterranean inspired dishes. Consume while young and fresh, preferably over 18 months.
