Specifically made as a food wine – medium bodied and easy drinking, yet with vibrant character. Particularly suited to spicy food and a wide cross section of Mediterranean cuisine.
The fruit for this wine was sourced off a single site vineyard in the sub-region of Watervale. Soil profile is red loam over limestone, typically known as terra rossa. Yield was 2 tonnes/acre.
Varying temperatures of mild to hot days accelerated the ripening period. However, the traditional Clare Valley cool nights helped retain good flavour profiles. The grapes were harvested in late March and fermented on skins through to dryness in static red fermenters. Alcohol 13.5%v/v.
The fruit for this wine was sourced from a single site vineyard in the famous Watervale region. Complex savoury aromas of black cherry and dusky brooding spices. The palate is a stimulating mix of savoury and spice, balanced with fine tannins. A juicy round mid palate and good length of flavour is a result of time honoured basket pressing. This supple style of wine can be enjoyed as a versatile food accompaniment. Short term cellaring of 3-5 years.
