A medium to full bodied wine of immense drinkability.
The fruit for this wine was sourced off our own winery vineyard. Soil profile is brown to red loam over limestone. Yield was 1.3 tonnes/acre.
Despite a hot burst of weather from January to mid-February, the season changed for the better to mild heat days and cool nights. A significant rain event in mid-February provided a much welcome relief to the vines and allowed for ideal ripening conditions, eventuating in good flavour profiles. The grapes were harvested in early April and fermented on skins through to dryness in static stainless steel fermenters. Traditional time honoured basket pressing has helped to give a good mid palate structure and length of flavour. 14.5% alc/vol.
This Watervale Cabernet Sauvignon was sourced off our own winery vineyard. Exhilarating mulberry/cassis and herbaceous aromas. Juicy berry flavours
give depth to the mid palate balanced with fine tannins and subtle oak. This round and voluptuous style is a result of time honoured basket pressing, finishing with good length of flavour. Cellaring potential of 6 – 8 years.
